Australian ANZAC Biscuits

Australian ANZAC Biscuits
The raccoon tried to make every biscuit the same size. It made big ones, little ones, and one suspiciously enormous one.

Ingredients

  • rolled oats
  • all-purpose flour
  • desiccated coconut
  • butter
  • brown sugar
  • honey
  • baking soda
  • water

Method

  1. Mix 1 cup rolled oats, 1 cup all-purpose flour, 3/4 cup desiccated coconut, and 1/2 cup brown sugar.
  2. Melt 100 g butter and stir in 2 tablespoons honey.
  3. Dissolve 1/2 teaspoon baking soda in 2 tablespoons hot water and add it to the butter mixture.
  4. Pour the wet mixture into the dry ingredients and mix well.
  5. Roll into small balls, place them apart on a baking tray, and flatten them slightly.
  6. Bake at 180°C for about 10–12 minutes, until the biscuits are golden.
  7. Let the biscuits cool on the tray for a few minutes, then transfer them to a plate.

Fact

ANZAC biscuits are associated with Australia and New Zealand. Their name comes from the Australian and New Zealand Army Corps.

Raccoon advice

Don't worry if the biscuits feel soft while they're hot: they will become firmer and crispier as they cool.
